Valentine Bouchées
Bouchée comes from the French word for "mouth" and
these tiny pastries will disappear in just a couple of bites!
Use my recipe for Homemade Puff Pastry (or use the
store-bought variety, but only if you must!)
Ingredients
1 batch of Quick Puff Pastry
Large and small cookie cutters of the same shape
Egg wash (one whole egg beaten with a tablespoon of water)
Filling of choice (pudding, pie filling, etc.)
Whipped cream

Preheat oven to 400° F. and line a baking sheet with parchment or cooking spray. Roll pastry sheet out to about 9” x 9”. Use the larger of your two cookie cutters to cut out as many shapes as you can get out of the dough. Set half of them aside. Use the smaller cutter to cut the center out of the remaining shapes. Brush the whole shapes with egg wash and place the open shapes on top. Use the back of a knife to make small indentations on the outer edge to seal them. Place the stacks and the cut-out centers on the baking sheet and brush lightly with egg wash. Bake at 400° F. for 12-15 minutes or until golden brown and crisp. Cool on the pan.

The cut out centers may be used as a garnish.
Fill the bouchées with:
- Pudding or pastry filling
- Cheesecake flavored pudding, cherry pie filling and a dollop of whipped cream
- Layers of marshmallow crème and fudge sauce
- Diced pears sprinkled with Chinese Five Spice and toasted pecans
- Fresh berries and clotted cream
The cut out centers may be used as a garnish.
