Puff Pastry Almond Squares
Made with Homemade Puff Pastry, these light and
flaky treats are delicious any time: as a sweet
way to start your day, to accompany your morning
coffee break or as an afternoon snack. You can use
frozen puff pastry, but if you were that kind of person
you probably wouldn't be on this website.

1 batch of Quick Puff Pastry
¾ cup almond paste or almond pastry filling
Egg wash (1 egg beaten with 1 tablespoon of water)
Powdered sugar icing
Toasted sliced almonds (see note below)
Preheat the oven to 400 F and line a baking sheet with parchment paper. On a lightly floured board, roll puff pastry into an 9” x 12” square and cut into 12 3” squares. Spoon 1 tablespoon of almond paste or almond pastry filling into the middle of half the squares. Brush the edges lightly with egg wash and place remaining pastry squares on top. Pinch the edges to seal with your fingers or the tines of a fork.
Arrange squares about 2” apart prepared pan. Here’s where you have a couple of options. You can: Brush the squares with egg wash and bake for 20 to 25 minutes, or until pastry is golden brown and puffed up. Allow to cool on the pan, then drizzle or brush with powered sugar icing and top with toasted sliced almonds.

Notes
--If you haven't ever made powdered sugar drizzle, it's easy. Put 1/2 cup of powdered sugar and a couple tablespoons of milk or cream, a drop of almond extract and a tiny pinch of salt into a small Pyrex picture. Mix thoroughly and pop it in the microwave for 15 seconds. on high. While hot it can be easily brushed on with a pastry brush, or it can be cooled slightly to pour in a thin stream for a light drizzle.
--Toasted sliced almonds are much crunchier and more flavorful. Place them in a single layer on an ungreased baking sheet and bake at 350 degrees for about 10 minutes. Check them often because they can burn quickly! I usually keep a couple of raw slices on the counter so I can compare them to what's in the oven--sometimes it's hard to tell if the nuts are darkening.
